FOR members of the Indian diaspora, the homeland is never too far away. No matter which part of the world do they live and earn, their mind and soul remain obsessed with their own soil. Recently, Indian news website The Quint posted a video on social media platforms that showed Manpreet Singh Ahuja, owner of a newly opened restaurant in London– Kachori — singing while preparing dosas with some of his co-cooks dancing and smiling behind him in the kitchen.
The one-minute video received a warm response with many praising Ahuja for enjoying what he does.
Ahuja, who is the head chef of the all-day dining restaurant at Elephant Park that serves dishes mainly from northern Indian regions such as Delhi, Rajasthan, Uttar Pradesh and Punjab besides others, was singing ‘Baar Baar Dekho’, a superhit Hindi classic song from 1962 film China Town that features Shammi Kapoor, Shakila, Helen and others.
Ahuja, however, improvised and sang as he put the batter on the pan and put the potato mix into it for making the dosa, “Baar Baar Dekho, Hazar Bar Dekho, Ke Dekhne Ki Cheez Hain Hamara Hindustan, Dosa ho, dosa ho” (See once, see again, see thousand times; our country India is something to see again and again, here is your dosa).
Ahuja is a three-time finalist at the UK’s Craft Guild of Chefs Awards and has worked and managed kitchens of restaurants, hotels, yachts, pop-ups, contract catering set-ups, community kitchens and others, according to his LinkedIn account.
